buttermilk southern chicken on a scratch buttermilk biscuit with bacon fat green beans & apple cider slaw.
had some half & half that was nearing the end of its useful tenure - added a little vinegar and used this for the kitchen buttermilk. 1.5 hour soak at room temperature and the chicken breasts came out of the cast iron skillet melt-in-your-mouth tender and juicy. definitely using this method again.
also, breading is 50/50 panko/flour - a bit of a departure but makes for a traditionally textured breading with just a little additional crunch.
